Herbed Pork Tenderloin – Solid Diet

¾ cup minced onions
1 Tbsp olive oil
2 tsp lemon juice
¼ tsp rosemary
Pinch oregano
Pinch basil
Pinch paprika
2 tsp minced garlic
¼ tsp salt
Pinch pepper
1 lb pork tenderloin
Preheat the oven to 325 degrees F.
Mix all the ingredients except the tenderloin.
Rub over the pork.
Put the tenderloin in a roasting pan.
Pour 1 can chicken broth into pan. Cover and bake in preheated 325 degree oven about 1 ½ hours or until tender.
Remove from the oven, cover with foil and let it sit for ten minutes.
Slice.
Yield: 5-3 oz servings
